No flour, no butter, no milk, gluten free, grain free absolutely deliciously guilt free!
Now this recipe is inspired by the traditional Jewish orange and almond cake but without all the mean stuff like butter and stuff.
It makes for a great quick take away breakfast for the whole family with about 100 calories a slice it is one of those cakes you can make on the weekend and it will stay just as moist (eeek I said moist ahh and again) all through the week.
Always remember unless you are having it for breakfast, its not 100% guilt free, is it better than processed cake crap, uh YEAH! but if you are gonna have it as dessert after dinner, thats your like tiny cheat of the day, don’t eat it then cheat by having a chocolate brownie right, your cheat meals should in theory still be relatively healthy and most importantly in moderation!
Servings 16 (a serving is a small squared slice)
– 2 whole oranges (leave the skin on or so help me god)
– 2 cups of almond meal.
– 2 teaspoons of gluten free baking powder
– 1/2 cup of organic maple syrup
– 6 eggs
– Vanilla essence (optional)
– Add poppy seeds and put in muffin trays if you want to trick your friends/children/husband into thinking they are actual orange and poppyseed muffins muahahahahahahahahahaahahaha
And that’s it! Can you believe it??? I cannot. Very simple and the amount of attention paid to it is minimal. You could do this half asleep, but don’t, that’s dangerous.
First step: Boil the oranges (forever….well 2 hours)
Keep hydrating them so the water doesn’t dry out because all of a sudden your pot is full of water nek minute the pot is dry and your oranges are burning to hell (yes this happened I’m not a patient person!)
Once the skin of the oranges is super soft let them cool for another forever, until they are cold enough so that they won’t cook the eggs when you mix them in. Now wait for a while and go do some squats.
Next step: Mush the oranges add the eggs, now, now, now, I know what you are thinking holy moly six eggs. YES, eggs are not your enemies, seriously eat them. Add all of the things! I don’t care what order this is an easy recipe! Mix it all with any utensil of choice.
Pour in baking tray of choice, I use a more or less rectangular baking dish, and really it helps me to cut is into little squares that I have measured at 80 cal per square. They are little. So that I can have one if it’s a dessert, two if it’s a snack, and 3 if I’m taking it for breakfast. Mostly I have them for breakfast because its quick, I can eat it on the bus, I burn it throughout the day and it’s a win win situation people.
Anyways: Oven time 40 min, 25 min in 200 C and 25min in 250 C. But my oven is a bit slow, so if you have one of those super ovens you decide your time, this is just an amazing cake.
